150 g fresh mature Cheddar cheese
50 ml soy sauce
40 ml toasted sesame oil
4 clove garlic
80 ml water
80 ml balsamic vinegar
Salt and freshly ground black pepper
1. In a small saucepan, heat 50 ml of the soy sauce and stir well until the soy sauce dissolves.
2. Place Cheddar in a large bowl and pour over remaining soy sauce and soy sauce sauce. With a wooden spoon, lightly mash the cheese together.
3. Melt the remaining soy sauce in a small saucepan, add garlic and water. When the mixture boils, reduce heat to medium-low and let the mixture sit for 5 minutes, then gently stir in balsamic vinegar, salt and pepper. Serve immediately with bread and stir into any portion of the sauce.
